Chris Peterson, a graduate of the first winemaking class at Walla Walla Community College, hits on an easy completion with this blend of Cab from stalwart Seven Hills Vineyard (67%) and Pepper Bridge (33%). Unlike the 2017 Cabs from Red Mountain and the Horse Heaven Hills with 80% new French oak, Peterson dialed back the wood influence to 60% new barrels for the third vintage from these sister sites. Blackcurrants, plum, fennel seed, tobacco and leather burst from the glass. Pomegranate-tinged acidity leads the palate, which is elegantly structured with long-lasting, steadily growing tannins. Its career will stretch into the next decade, and last fall, it earned a gold medal at the Great Northwest Invitational Wine Competition in the Columbia Gorge for retired NFL quarterbacks Damon Huard and Dan Marino. Heaven help the foes.
