The Walla Walla wine industry’s historic schoolhouse pulls from four vineyards in cooler sites across the state — including famous Evergreen in the Ancient Lakes and Stillwater Creek in the Frenchman Hills — for the Clubb family’s flagship Chardonnay. The three-week early-morning harvest for this bottling spent six months on the lees in predominantly neutral French oak, which leads to aromas of butterscotch and light toast with lemon oil and hominy. The theme on the palate is pleasantly bright, juicy and food-friendly with hints of pear pie and lemon, backed by a dash of white pepper, a nibble of apple skin and a dusting of classic Ancient Lakes minerality.
