
These Dijon clone 76 vines, originally planted at the top of Beacon Hill Vineyard by Tony Soter, reach back to 1989. However, George Hillberry and Carla Rodríguez purchased the vineyard in 2011, and Hillberry soon began producing wines from the vineyard he farms. The program of 10 months in 25% new French oak yields aromas of banana taffy, lemon oil and Bosc pear. The entry brings a spoonful of apple sauce that leads to a nicely rounded midpalate of fresh-cut pineapple and a finish of apricot with a lick of the pit. Enjoy with Asian dishes featuring coconut, chicken, shellfish or creamy pasta.
