One of Precept Wine’s largest estate sites in Washington state — Canyon Vineyard Ranch east of Prosser — plays a key role in one of the Northwest’s biggest efforts with rosé from this Italian red grape. Its salmon-colored appearance is the first clue of the profile, which is brisk and mouth-watering from start to finish. There’s a fun hint of cotton candy in the nose, along with dried Bartlett pear, gooseberry and a scrap of slate. On the palate, its filled with nectarine Asian pear and a pop of gooseberry as the structure builds into a food-friendly and refreshing drink that’s bone-dry with imperceptible residual sugar (0.3%). Suggested pairings include oysters on the half-shell, steamed clams, sushi and crudité, and these wines are available at Safeway/Albertsons stores in the Northwest as well as Kroger-owned QFC and Fred Meyer.
