Terra Blanca Winery and Vineyard 2008 Signature Series Cabernet Sauvignon, Red Mountain, $45

terra-blanca-cabernet-sauvignon-signature-series-bottle-2008Owner/winemaker Keith Pilgrim has fashioned an estate Cabernet Sauvignon — which he harvested Oct. 11 from 16-year-old Salmon-Safe vines on Red Mountain — that’s dark, dense and decadent. His opulent approach of 32 months with French oak (74% new) creates the mood with tones of dark chocolate, cocoa powder and espresso backed by black currant, red cherry and plum.
