Hal Landvoigt, director of winemaking for Precept Wine, created this tasty blend of six varieties — leading with Cabernet Sauvignon (43%) — from seven vineyards, including Zephyr Ridge in the Horse Heaven Hills. The assortment helps account for the complex aromas of black cherry candy, plum and black licorice with herbal notes of cherry pipe tobacco, horehound and cigar ash. While the contributions of Cabernet Franc amount to just 10%, they loom large on the palate where Bing cherry and blackberry flavors pick up hints of tobacco leaf, bell pepper and green olive. Food-friendly acidity akin to Montmorency cherry pushes from the midpalate on through the finish.
